Star Trek: The Original Series
In which Captain Kirk and Mr. Spock invent slash and have hot buttsex with each other.
Dr. McCoy sometimes joins in.
Star Trek: The Animated Series
Not technically canon, but more Kirk/Spock action.
Star Trek: The Next Generation
In which Captain Picard pwns all and perfects the art of the facepalm.
Star Trek: Deep Space Nine
In which there is infighting and then a massive interstellar war, caused by Captain Sisko.

Star Trek: Voyager
In which Star Trek begins to suck. We blame Rick Berman, who shall be shot out of a cannon. Also, there's the really hot Seven of Nine.
Star Trek: Enterprise
In which nobody really cares anymore, because Scott Bakula was much better in Quantum Leap anyway. Also, when it actually started to get good, SciFi started their current Friday night line-up opposite it, which consisted of the superior Stargate: SG1, the slashy Stargate: Atlantis, and the brain-devouring (yet awesome) Battlestar Galactica.
Films
Eleven Star Trek films have been made, of which three are truly good (The Wrath of Khan ,or just KHAAAN!; First Contact, or "Captain Picard fights the Borg while Geordi invents the warp drive"; and Star Trek, or "The Big TOS Reboot of '09"), and two others (The Voyage Home, or "Spock dances with whales"; and The Undiscovered Country, or "Shakespeare in the Sky with Klingons") are decent (and the former of which is The Funniest Star Trek Movie Ever). The rest are varying levels of quality, including one or two that are absolute crap. YMMV, and of course, this has caused wank amongst the fanboys, but for the most part, it stays off LiveJournal. It's all over Usenet and messageboards, however.
Tie-In Novels
Authorized fanfic, really. Not canon, but does it matter? Some of them are good (Peter David's, Diane Duane's), some of them suck, and some of them are legendary. (How Much For Just the Planet, which we deeply wish could be performed sometime.)
The Fanfic
Like said above, this fandom created slash. Oh, and Mary Sues, too. One of the best places to find fics is the alt.startrek.creative archive. (F_W's own telesilla maintained the erotica's section's FAQ for a while.) But heck, they even have gen!
